I've taken to using notational velocity like you've suggested above. If an app doesn't have some kind of web sync built into it, I tend to overlook it and find something else. Feel your pain. It's the old RonCo "Set It & Forget It®" mentality. I can handle syncing my music & movies - I'm used to that. But when I'm typing my grand manifesto, I don't want to worry about my iPod Touch crashing before I can get back to my home network, opening the corresponding app on my laptop, then pressing "sync." I get really annoyed at apps that don't sync across the web. Having to plug my phone into iTunes is starting to get really old. This could be another endorsement for Mobile Me, but I guess we'll have to wait and see what happens with the next iPhone OS. Syncing is a huge part of my work flow. It will be interesting to see what things iPhone HD/4/whatever introduces that the jailbreakers have been using for a long time. I'm ready for more Wi-Fi syncing in more places.
